What is rogan josh?

Rogan josh is a slow-cooked lamb curry from Kashmir, in the far north of India. The name is usually traced to Persian words: rogan means oil or fat, and josh means heat or passion. Put together, it describes a rich curry where the spices are cooked slowly until the colour and flavour deepen.

Unlike a creamy korma or a fiery vindaloo, a good rogan josh sits in the middle. It's aromatic and warming rather than blow-your-head-off hot, which is why it's one of the most popular Indian curries for people who are new to Indian food.

At Shiraaz, our rogan josh is diced lamb cooked in a rich onion gravy with our own blend of spices, then garnished with fresh coriander. We serve it medium hot, and chef Lal Khatri's team can take the heat up or down if you ask when you order.

Every curry is cooked fresh in our kitchen on Burwood Highway, the same way it has been for more than 30 years. We also hold a 5-star food safety rating from Knox City Council.
